Scientific Talk by prof. Nikiforidis
On December 8, 2023, upon invitation by Diana Baigts-Allende, Ph.D., Drift-Food Chair Holder, a scientific talk was presented by professor Costas Nikiforidis from the Biobased Soft Matter (BSM) group at Wageningen University & Research. The scientific talk entitled “Plant-derived Lipid Droplets in Meat Alternatives” focused on oleosomes, mimicking animal fat tissues using plant proteins, and 3D printing technology for plant-based marbled steak.
Dr. Costas Nikiforidis is a Chemistry Graduate from Aristotle University in Thessaloniki in Greece. He holds a PhD in Physical Chemistry of Foods and has been working in Wageningen University in the Netherlands for the past 12 years. Currently, he is an Associate Professor of Biobased Soft Matter and leads a team of 9 PhD candidates, 2 postdoctoral researchers and several undergraduate students. Dr. Nikiforidis’ research focuses on the extraction of proteins and lipids to create new and sustainable food structures. He has published over 65 peer-reviewed articles, holds 4 patents, and is frequently invited to speak at conferences, universities, and companies.”
