New DRIFT-FOOD Publication
We are pleased to announce a new open-access on-line publication from the DRIFT-FOOD team:
“Data set of small peptides profiles quantified in Jihočeská Niva cheeses and their antioxidant capacity generated at different ripening times”, published in Data in Brief by Sandra T. Martín-del-Campo, Alexa Pérez-Alva, Bakht R. Shah, and Diana K. Baigts-Allende.
The study provides a comprehensive dataset on short-chain peptide profiles and antioxidant capacity in Jihočeská Niva cheeses at four ripening stages. It includes peptide profiles, antioxidant activity (DPPH• and ABTS•+), total phenolic content, and key physicochemical characteristics of the cheeses.
The dataset, available under a Creative Commons license, offers valuable resources for further research into cheese ripening, bioactive peptides, and the functional properties of fermented foods.
