We are pleased to announce the publication of our latest research in Applied Food Research, titled:
“Overall use of edible insects for producing food analogs and upcycling insect-derived ingredients from residues.”
This study, led by the DRIFT-FOOD team, delves into the innovative use of Alphitobius diaperinus larvae as a sustainable and versatile resource for food production and circular economy applications.

Our research focused on two main strategies:
Developing milk analogs using insect-derived biomass
Upcycling insect residues to extract chitosan, turning by-products into high-value ingredients
This dual approach contributes to advancing circular waste valorisation by minimizing waste and maximizing resource use.

By integrating insect-based ingredients into food systems and valorizing their processing residues, this study demonstrates a viable path toward more sustainable, nutrient-rich, and eco-friendly food innovation.
